Fresh peach season is almost upon us, so I thought I would provide 57 Ways to Use Fresh Peaches — everything from breakfast ideas, to desserts, to delicious side dishes and salads. Southern Pecan Praline Cake is one awesome cake. A Butter Pecan Cake Mix is mixed with a tub of Coconut Pecan Frosting and more pecans. Then a spectacular Butter Pecan Glaze is drizzled over the top. This cake can certainly be served for dessert but it has the consistency of a coffeecake which makes it one awesome breakfast idea–especially for holiday breakfasts.
When I first saw this recipe on Pinterest a while back, I knew I would have to make it. It sounded so wonderful and I drooled over the pictures. But then, I almost always drool over the pictures from The Country Cook’s blog. Everything always looks amazing. And this recipe was no exception. I thought it would make the perfect breakfast coffeecake for some friends who recently moved into a new home. I wasn’t wrong. Our friend’s loved it!
Southern Pecan Praline Cake has quite a bit of crunch from the pecans with a nice praline taste from the cake and the glaze. Adding a tub of Coconut Pecan Frosting to the cake mix adds sweetness, flavor and texture to the Butter Pecan Cake Mix. Mexican Lasagna is awesome. The beef mixture includes refried beans, diced green chilies and taco seasoning and is layered between noodles cheese. Then a salsa mixture is poured over top before baking. And get this, NEWS FLASH: You don’t have to pre-cook the noodles! After the casserole is baked the topping is added: sour cream, cheese, green onions, olives and tomatoes, if desired. The taste is utterly amazing. While lasagnas are a little more work than some casseroles, this one is one of the best.
We entertain a lot and I love trying out new recipes on people. I remember we had a houseful of company one evening when I served this and everyone raved over it. In fact, every time I’ve made this recipe it’s been for company! It’s a great recipe to make, especially if you enjoy different types of lasagna and appreciate a Tex-Mex version instead. Not having to pre-cook the lasagna noodles sure is an advantage and definitely saves time.
I made this again yesterday, so I’m going to include updated pictures of how I did this. The recipe is from inspired from Taste of Home’s Ground Beef cookbook. This casserole is fantastic and very worthy of being added to your lasagna or Tex-Mex collections.
When I originally posted this recipe in June 2012, I was in the first couple of weeks of food blogging. I updated the pictures again in August 2012, and they were really of poor quality. I was using a cheap iPhone 3 camera at the time, and I didn’t hold the camera very steady, causing blurry pictures. On top of that, I knew next to nothing about food presentation or food photography so the lasagna didn’t show to the best advantage.
I recently remade this fabulous casserole for company again (January 2015), and served it along with Butternut Squash Bake, Corn and Green Bean Casserole and Raspberry Almond Bars along with another dessert. Our guests brought salad, Guacamole and homemade salsa. We had plenty of food and they kept packing it in! 🙂 Even one of the kids said this was the best lasagna he’d ever eaten.
This is a great lasagna but let me provide a few tips before making this so you can have a good outcome. 1) It is crucial that you spread about a cup of the meat sauce on the bottom of a well greased baking dish before layering the noodles. Otherwise the noodles will stick to the bottom of the pan and you will have to use a chisel to get them out! 🙂 2) You can’t add extra layers and noodles to this recipe, because the salsa/water mixture that’s poured over the top is only enough juice to cook about three layers of noodles. I recommend removing the cup (or more) of beef for the bottom layer, then dividing the remaining meat into three portions for each remaining layer. (Don’t just dab the meat on like you see in my pictures). 3) Cover the casserole while baking so the noodles don’t dry out. 4) The casserole should ideally sit out for 10 minutes before cutting into it. 5) If you prefer, you can mix the salsa with enchilada sauce instead of water like I did for this recipe. It will provide even zestier taste. Serve with Guacamole, Hot Sauce, Salsa, sour cream and tortilla chips and you have a main dish meal to rave over.

I know you are probably tired of me raving about the richness and decadence of a specific dessert. I just can’t help it. Chunky Monkey Brownies are so sensational you will drool while you’re eating them. No kidding. Instead of using regular chocolate chips I used Hershey’s new baking melts in the brownie and then used chocolate chips on top. Oh, my. Chocolate just explodes in your mouth with every bite. The Baking Melts are much larger than chocolate chips so it’s like having miniature chocolate candies inside. Loved ’em! 🙂
I had an overabundance of bananas on my hands last month. John was out of town for a week and, before he left, he purchased several big batches of bananas. I think I had about 15-20 bananas I needed to get rid of. So, I started checking out Pinterest for ideas on goodies I could make using overripe bananas. I found several recipes I decided to make, including this one based on a Mark Bittman Recipe.
While I normally would have made this recipe with chocolate chips, I had these baking melts that I purchased before the holidays that I wanted to use up, so I thought this would be a good recipe to do that. I wasn’t disappointed. Chunky (really chunky) Monkey Brownies turned out terrific. My heavens, it was hard to keep my hands out of these goodies! If you have a hard time finding baking melts, you can substitute chocolate chunks.
If you’re looking for a rich, gooey and, yes, decadent brownie recipe, than look no farther than Chunky Monkey Brownies with baking melts. Y-U-M. Yes, of course, you can use chocolate chips. But for a richer, deep chocolate flavor, try the baking melts. They’re awesome!

Oh, my goodness, this dessert is such a delight. Chocolate lovers and Cheesecake lovers will love the combination of flavors in this “wreck” of a cake! Coconut and pecans are placed at the bottom of a baking dish. This is topped with German chocolate cake batter and then a cream cheese layer. While the cake bakes, all the ingredients perform a seismic shift and an “earthquake” occurs. All that yummy chocolate and cheesecake, along with coconut and pecans cracks as the cake bakes and cools so that craters, crevices and gorges form, much like Grand Canyon. It is amazing.
A couple of months ago we had a houseful of company for lunch after church one Sunday and one of the gals brought this fabulous cake. Decadent doesn’t even begin to describe this ooey, gooey affair with chocolate! It was so mouthwatering. I could have eaten gobs of this stuff, but restrained myself because I have such a dessert addiction anyway. Besides, I wanted to make sure everyone else got a piece. 🙂
Earthquake Cake is a quick and easy dessert that’s great to make for any kind of holiday party, birthday, special occasions like anniversaries or baby showers, and certainly anytime you’re having company! Everyone will rush for a piece of this luscious cake. Quite frankly, it doesn’t need any chocolate syrup poured over top, although I did that for the pictures. It has plenty of flavor, plenty of sugar, and plenty to satisfy any sweet tooth craving without adding chocolate syrup, ice cream or whipped cream. But if you just can’t help yourself–well have at it!
If you’re looking for a wonderful dessert to knock the socks off your family and friends, then Earthquake Cake is the dessert that will do it. It is so delicious everyone will want seconds and thirds. No kidding. So be generous and don’t hog the whole dessert for yourself. Allow everyone else to get a piece, too. Otherwise, you will be scrambling to make a second Earthquake Cake shortly thereafter!

This amazing cake is filled with a chocolate layer, a coconut and pecan layer and a cheesecake layer which undergo a seismic shift during baking causing crevices in the cake, and thus, Earthquake Cake. Great dessert for holiday baking and company.

Ingredients
  • 1 Duncan Hines German Chocolate Cake Mix
  • 1 cup coconut
  • 1 ½ cups chopped pecans
  • 8-oz. cream cheese
  • 1 stick (1/2 cup) butter
  • 4 cups powdered sugar
Instructions
  1. Preheat oven to 350°.
  2. Grease and flour a 9x13” baking dish.
  3. Spread pecans and coconut in the bottom of the prepared dish.
  4. Mix cake mix according to package directions.
  5. Spread over top of pecans and coconut.
  6. Melt butter and cream cheese over low to medium heat in small saucepan.
  7. Remove from heat.
  8. Add powdered sugar and whisk to combine.
  9. Spread powdered sugar mixture over top of cake batter in baking dish.
  10. Smooth the top.
  11. Bake for 45 minutes or until cake tests done.
  12. Cool completely before cutting into squares.
  13. Store covered tightly.
  14. After 2 days, store in refrigerator.
Notes
My cake mix required 3 eggs, ⅓ cup canola oil and 1 cup water to make cake according to package directions.

Hannah said the original recipe called for 1 ½ cups coconut but that it totally overwhelmed the cake so she cut it back to ½ cup. I’ve increased the coconut to one cup for a happy medium.

You can also add chocolate chips on the bottom of the dish with the coconut.

Cover cake with foil after about 25 minutes to prevent cream cheese layer from browning too

Oh my goodness, have I got a fabulous breakfast muffin for you! This one is a superb option for Christmas breakfast or any other holiday breakfast or special occasion. I love these Breakfast Muffins because they’re a healthier, gluten free option and they’re just too cute and scrumptious as well! They contain bacon, eggs, two kinds of bell peppers, a hash brown potato crust, lots of cheese and seasonings that just make them pop. Every bite is so wonderful, you will scarf down two or three of these down in a flash.
A couple of weeks ago, I made breakfast for a houseful of girls who were staying with friends for a discipleship weekend our church was putting on. I made these for Sunday breakfast. I wanted something that could be warmed up easily so the hostess would not have tons of preparation work to do on Sunday morning while trying to get 12 girls ready to transport to church by 9 a.m. I served these muffins along with Raspberry Lemon Streusel Muffins, but they also warmed up the leftover Sausage Gravy and Biscuits from the day before along with the leftover Pecan Cranberry Muffins. They were such a big hit. Plus, since Debra, the hostess, has Celiac Disease she was able to enjoy a gluten free breakfast.
Listen guys, these muffins are a must try! They will make a spectacular addition to your holiday menu. If you want a bacon and egg breakfast, make up a batch of Breakfast Muffins and watch them disappear.

Years ago I found this really simple Taco Bake recipe from allrecipes.com with very few ingredients. It’s so quick and easy to assemble and in about 15 minutes you can have this casserole ready to put in the oven. It’s quite adaptable too if you want to add a few other ingredients, such as green onions or olives. I made this recipe last week for a young family who just had a newborn. If you’re family is into anything Tex-Mex they will adore this wonderful, comforting main dish. It is a little like eating nachos in casserole form.
Taco Bake has tortilla chips on the bottom, then a layer of ground beef mixed with taco seasoning, sour cream and green chilies, followed by a layer of shredded cheese. The layers are repeated a time or two ending with more cheese on top. It is SOOOOO easy. Choose a gluten free, MSG free taco seasoning or make up my Homemade Taco Seasoning recipe from scratch for healthier options.
If you need a quick and easy main dish recipe to throw together quickly because you are at ball practices, doctor’s appointments, or other venues late in the day, consider having these ingredients on hand and whip up this easy casserole. You can be ready to eat in about an hour! This is a great recipe to teach your kids how to cook, too. It has so few steps and turns out so wonderfully–they will be greatly encouraged in cooking after making this tasty entree for dinner. This only has seven ingredients so it is an easy recipe even for a novice cook!
When I initially posted this recipe in June 2012, I had just begun my blog. I made Taco Bake a second time that year and retook the pictures, but they were taken with a small iPhone camera so the pictures were not of the quality I would have liked. Plus, I had baked the recipe in foil pans which are so hard to photograph because of the glare. I’ve been remaking all my first year pictures as a result, and reshooting pictures that are more pleasing. I remade Taco Bake in October 2015 for a church potluck and it again was a real winner with everyone. I believe you’ll think so too.

I used these ingredients. I made up my own Homemade Taco Seasoning in the plastic bowl.

Brown ground beef. Drain if necessary. Add a can of undrained diced tomatoes and chilies, taco seasoning, sour cream and water.

Stir together and heat through about 5-10 minutes.

Awesome Texas Tornado Cake

What a delicious and easy sheet cake to make! Texas Tornado Cake is made with a can of fruit cocktail in the batter, then before you bake the cake you sprinkle a streusel topping with nuts over the top. After the cake comes out of the oven you add a boiled coconut topping and pour it on the cake while hot. Oh, soooo scrumptious! This wonderfully quick and easy recipe is also quite economical as you get 15 or so servings out of the cake for less than $10. If you have coconut and nuts on hand all the time like I do, it will cost even less. I was trying to use up some half-and-half in my refrigerator and I even had a can of fruit cocktail in my pantry so I didn’t need to go to the store for any ingredients when I made this tasty cake recipe.
Years ago, in the early 1980s when our children were infants, Sandi Weikel brought this cake to a Sunday school fellowship our class  was having. Granted, I have a sweet anyway so it’s rare when I don’t like something sweet, but I took one bite of this sweet cake and knew I had to have the recipe. I have made this recipe so many times over the years for two basic reasons–okay, three! 1) I almost always have all the ingredients on hand so I can make it on the fly. 2) It really is so inexpensive to make. 3) It tastes great!  I love all the peaches and pears in the fruit cocktail. I love coconut. I love walnuts or pecans (any kind of nut for that matter), so this has always been a win-win for me. It’s a win-win for my husband, too, because he hates dry desserts, and quite frankly, he rarely touches any dessert that doesn’t have fruit in it. He would much rather eat a dessert with fruit than chocolate. (Go figure!) So this tasty cake recipe has been on our “to-make” list lots of times over the years.
I’m not sure how the recipe got it’s name. The Weikels and our family were both living in Florida at the time and neither of us had ever been to Texas! I assume that Sandy got this recipe from her mom and it was passed down in some way. The cake doesn’t actually look like a tornado hit it (at least I don’t think it does!) Be that as it may, I present to you Texas Tornado Cake–lovely, delicious, moist, and sumptuous.
If you’re looking for a quick and easy dessert for your family, Texas Tornado Cake should top your list! It’s really a fabulous recipe. Dollop some vanilla or Snickerdoodle Ice Cream over the top and you will be in seventh heaven! You and your family will savor each mouthful, all the while vanilla ice cream dribbles down your chin! 🙂

Heath Toffee Cheesecake Brownies are divine. Really. They start with a chocolate chip cookie dough but use Heath English Toffee Bits instead of chocolate chips, then a luscious cheesecake layer is stacked on a layer of cookie dough. The cheesecake has more cookie dough crumbled over top and sprinkled with more Heath English Toffee Bits. Oh my. Rich, decadent, amazing. I love these jewels and believe you will too.
I have over 1,100 recipes posted on this blog and I think over half of them are cookies and brownie recipes! No kidding. I make a lot of them. My husband likes to take cookies with him whenever he visits friends so I make goodies frequently and store them in the freezer until he’s ready to take them. We were at a meeting this week with trustees for his company and several people came up to me and told me how much they enjoyed the goodies he had brought to them. I enjoy baking, and cookies and brownies are among the easiest to transport or pack up and take without making a mess.

This luscious brownie has a cheesecake layer sandwiched between two layers of Heath Toffee cookie dough. Heath English Toffee Bits makes these brownies special.

Ingredients
COOKIE DOUGH LAYER:
  • 1 cup unsalted butter, softened
  • 1 cup white sugar
  • 1 cup brown sugar
  • 2 eggs
  • 2 tsp. vanilla
  • 1 tsp. baking soda
  • ½ tsp. sea salt
  • 3 ½ cups UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
  • 2 8-oz. pkgs. Heath English Milk Chocolate Toffee Bits
CREAM CHEESE FILLING:
  • 2 8-oz. pkg. cream cheese, softened
  • 2 eggs
  • 2 tsp. vanilla
  • 1 cup sugar
Instructions
COOKIE DOUGH LAYER:
  1. Mix butter, sugars, eggs, vanilla, baking soda and salt with an electric mixer until well-mixed.
  2. Stir in flour and 1-and-a-half packages Heath English Toffee Bits.
  3. Spray an 11"x17” jelly-roll pan with cooking spray.
  4. Press about ½ to ⅔ of the cookie dough into the pan.
  5. Spread cream cheese filling over top of Heath Toffee cookie dough layer.
  6. Crumble remaining cookie dough over top of the cream cheese layer.
  7. Sprinkle ½ package of Heath English Toffee Bits over top of cookie dough layer.
  8. Bake at 350° for about 35-40 minutes, or until toothpick inserted in center comes out clean.
CHEESECAKE FILLING:
  1. Mix cream cheese, eggs, vanilla, and sugar with an electric mixer until smooth.
  2. Pour over cookie dough crust layer and cover with remaining dough.
